Beefroot
Friday, May 29th, 2009Beefroot, or colloquially groundsteak, is an indigenous plant commonly found in several South-Western states. Related to the carrot, beefroot is notable for its unique texture and flavor.
For many years beefroot was used almost exclusively as a beef substitute by the lower classes, and still has the disparaging nickname dirtmeat. Beefroot gained popularity with the resurgence of the hippie movement, displacing tofu, and has remained a staple of the vegan diet since.
Health-wise beefroot has almost no nutritional value and in many ways is worse than actual beef. Although with adequate preparation beefroot can be a part of a balanced meal.
